Prawns in Garlic Oil
Ingredients for two:
Rinse prawns in water and allow to thaw. If pressed for time, hold prawns under lukewarm water until thawed. Peel and very finely chop the garlic and onion. Finely chop the parsley. Rub the exposed back of the prawns with garlic. Fill a pan with olive oil until the bottom is completely covered. Sauté the onions and garlic, add prawns and let cook over medium heat for about five minutes. Sprinkle with parsley, season with salt and pepper and serve either in the hot pan or in preheated bowls.
